Paleo Style Skinny Vanilla Latte

True story #1. I am a big fans of coffee in the morning. Not crazy, over the top, out of control until I get my first cup of coffee but some mornings it gets pretty close- I really do need it. And of course not just any cup of coffee will do. It’s got to be rich and creamy, flavorful, and steaming hot too!

True story #2. We are not big fans of empty calories and preservatives such as those found in store bought creamers. Sure, store bough creamers do taste great and make your coffee rich and creamy for sure but starting the day by drinking a quarter cup of fake sugar just doesn’t sound good.

True story #3- Those fake creamers are not Paleo friendly- at all. They have more processed ‘stuff’ in them than I can list. No natural things in that bottle! If you are trying to stick to a paleo diet, you will need an alternative. Don’t worry, I can help!

Making a Healthy Vanilla Latte in the Morning

As I mentioned, I need coffee every morning. It’s not just a want, it’ a seriousneed. I am also quite specific about how I want my coffee to be made (hot, flavorful, creamy and strong!). I know, I know, I’m demanding. But a great cup of coffee can really set the tone for the day, not just wake you up so you really need it to be perfect. (Coffee has a variety ofhealth benefitstoo so I like to consider my cup as a healthy start to the day as well!)

Now, I used to be one of those people who went into the local coffee shop every morning and ordered complex drinks that ended up costing around $6 each so that habit had to end. Not only does it getsooooexpensive to visit a coffee shop daily but you also have little control over the product.

Sure you can order your drink in a specific manner (extra hot, almond milk latte with two pumps of vanilla and an extra shot of espresso), but that doesn’t mean you can request preservative free vanilla or non GMO almond milk. So are you really getting what you want at that coffee shop? Also, every barista makes a drink a little differently. While I finally got my local coffee shop to make my latte exactly how I wanted it, if a new barista was hired, the quest for the perfect latte started all over again. Somethings you just have to do for yourself!

Trying Different Ingredients for the Perfect Latte in the Morning

After nixing my trips to buy my daily latte (my wallet was so happy!), I tried making coffee at home with store bought creamers for a while. They were good but those creamers are still loaded with sugar and unnecessary preservatives- carrageenan and “artificial flavor” as ingredients? No thanks! But how can I make my much needed coffee amazing without breaking the bank or drinking chemicals for breakfast?

Well, I found a way! After playing around with a few latte recipes, I discovered the best way to make a skinny vanilla latte right at home. And it only takes about a minute in the morning which is about all the spare time I have- talk about perfect!

You may be wondering how you can make a latte without a fancy espresso machine. Don’t you need to press the espresso and steam the mix? The answer to that is no! If you have a microwave, you will be just fine. No expensive machine necessary. Besides, who has the counter space for an espresso machine anyway?

All you have to do is heat almond milk in the microwave until it is nice and hot. Add some instant coffee, stevia and a few drops of vanilla, stir vigorously and voila! An amazing skinny vanilla latte is ready to drink!!! You will be on your way with a hot cup of flavorful coffee in no time.

Adding Healthier Ingredients to the Perfect Morning Latte

There are a few simple alterations you can make to this recipe to really make it your own. For example, coconut milk or cashew milk will work really well to replace the almond milk. If you are looking for a little real dairy, use regular 2% or skim milk- almost all milks will work! You can even go the extra mile and make your own nut milk. You can also try using almond extract instead of vanilla for an amazing almond latte. Pretty much any brand of instant coffee will make this latte great so choose whichever brand you love the best. Add a little extra coffee on mornings when you really need a nice strong cup.

If you happen to own an espresso machine, make one shot of espresso and pour it into the milk mix. This will be exactly as you would expect in a coffee shop but healthier, tastier and cheaper.

How to Make a Skinny Vanilla Latte at Home

Using stevia instead of sugar is the main thing that helps this latte be “skinny”. There are so many empty calories in sugar and those other artificial sweeteners are of questionable origin. Also, they are definitely not Paleo and if you are trying to stick to an all natural, caveman diet, sugar and most sweeteners are off limits.

Stevia is actually an herb that is originally from South America but is now grown all over the world. Stevia leaves are naturally sweet and contain no calories, carbohydrates or artificial anything! This is perfect for those, like me, who love sweets but want to stay away from high calorie, artificial foods. Sure, maple syrup and honey will both work if you are sticking to a Paleo diet but they contain just as many, if not more, calories than sugar. Not something you want to be drinking every morning (multiple times, if you are like me).

If you prefer regular sugar or a different type of sugar substitute, use it! Just remember that this latte may not be so ‘skinny’ if you use a different type of sweetener and it also may not be Paleo. However, your morning cup should be exactly as you like it- your whole day depends on it!

So there you have it, my ideal skinny vanilla latte made right from home for just a few cents per cup. So much better than going all the way to a coffee shop to spend several dollars every day and definitely better than pouring artificial flavored creamers into my coffee. You should really give this skinny vanilla latte recipe a try when you need your next morning pick me up. You will be hooked just like me! No need for an espresso machine or anything fancy- just a good, dependable, healthier cup of coffee. Time for the recipe!

Ingredients

Scale

  • 810 oz. unsweetened almond milk
  • 1 tsp stevia
  • 2 tsp Nescafe instant coffee (or any other of your choice)
  • 1 tsp or drop of vanilla for flavor

Instructions

  1. Heat milk in microwave for approximately 2 -3minutes
  2. Add instant coffee, stevia and vanilla
  3. Stir and enjoy!

Notes

  • Sprinkle some cinnamon on top of your latte for a real coffeehouse touch
  • Pour a tiny bit of the steaming hot milk in a blender and puree on high. This will give you some frothy milk to pour into your latte
  • Almond milk, coconut milk, hempseed milk, soy milk and cashew milk all work fantastically, are Paleo friendly and loaded with extra health benefits you may not find in regular white milk.
  • You can easily double this recipe but you will have to heat your milk longer in the microwave.
