Making Healthy Coconut Coffee

As a mom to a high energy two-year-old, I need my morning coffee. However, I am also kind of a coffee snob (I admit it) so any old cup of joe just won’t do. I need a great tasting coffee, I need it to be strong and I need it to have some kind of tasty flavor. I know, I’m pretty demanding! But when it comes to coffee, I don’t have time to mess around.

I have learned two very important things about coffee over the years. First, pressed coffee is much more flavorful, extra strong and comes out perfectly every time. So, ditch that old automatic coffee brewer and get ready to try some real coffee! The second thing I have learned is that it is so incredibly easy to flavor your own coffee in a natural way rather than buy mass produced, fake flavorings that are full of sugars and additives.

Better Coffee at Home

Now, after years of drinking sub-par coffee, my absolute favorite thing to make every morning is toasted coconut coffee made in my American Press. Intrigued? Well let me show you how to make your own! Maybe you have heard of a French press and maybe you have even used one yourself. They are great but you know what’s even better? It’s American Press.

The main reason I am obsessed with my American Press is because it is easy to clean due to the convenient little pod where you put your coffee grounds. With a French press, after your pour the coffee out, you are left with a carafe of sludge which is annoying and messy to wash. With the American Press, you can simply take out the little pod, dispose of the coffee grounds and go on with your day! Things that are easy to clean is this mom’s dream!

Creating a Natural Coconut Flavor

The American Press pod is also where all the magic flavor happens. I grind my toasted coconut and coffee together and then pack them into the pod where the flavors of the coffee and the flavors of the coconut can unite. Since the toasted coconut is also contained within the press, you don’t have to worry about getting crunchy pieces in your coffee (nobody wants to chew their drinks).

After I load up the American Press pod with the coconut and coffee grounds, I pour hot water, coconut oil and a tiny bit of vanilla extract into the press and let it steep together. While the hot water is self explanatory and you may have guessed that the vanilla extract adds a rich, warm flavor to the coffee, what’s the deal with the coconut oil?

Coconut Oil Benefits

Well, coconut oil can help increase your energy as your body will quickly metabolize the medium chain triglycerides in coconut oil and use them as fuel. Coconut oil will speed up your metabolism in general – sounds like a good way to begin the day. The lauric acid in coconut oil will also help boost your immune system. Oh, and did I mention it has a pleasant coconut flavor? Definitely do not skip the coconut oil in this recipe!

When I want a hot coffee in the morning, I pour my coffee creation right into my mug, add a little coconut milk (because a little extra coconut flavor is a must!) and I’m on my way, off to chase around my adorable Tasmanian devil. Let’s be honest, sometimes I don’t even use a mug, I just drink my coffee straight from the American Press because it has no leaky pour spout and is shatter proof meaning if my daughter runs into me and I drop my coffee, glass won’t go flying everywhere- can you tell I love my American Press?

Cold Coconut Coffee in the Summer

Since the weather has been getting hotter, I have lately been creating a cold brewed version of this drink. It takes a little more preparation but is well worth it in the mornings when your cold brewed, toasted coconut coffee is just waiting for you in the fridge. The night before, make the coconut coffee but with cold water rather than hot.

Wrap it up tightly and put it safely into the fridge for the next day. Pour coconut milk into an ice cube tray and freeze- the perfect pairing for your morning beverage! Now you have something to look forward to when you wake up! So simple yet so delicious.

Ingredients

  • 3/4 cup whole coffee beans
  • 2 Tablespoons unsweetened shredded coconut
  • 1 tablespoon coconut oil
  • 1/4 teaspoon vanilla
  • 3 Tablespoons coconut milk

Instructions

  1. Toast the shredded coconut in the oven for about 5 minutes or until slightly golden at 350 degrees.
  2. Grind the coffee beans and toasted coconut together in a coffee grinder.
  3. Add the ground beans to the American press and fill with hot water, coconut oil and add the vanilla extract. Let steep for about 5 minutes.
  4. Press the grounds down slowly.
  5. Pour the coffee into mugs and add the coconut milk. Enjoy while hot!

For everyone that likes cold coffee in the summer, we included a cold drink version of our coconut coffee recipe!

Ingredients

  • 3/4 cup whole coffee beans
  • 2 Tablespoons toasted coconut
  • 1/4 teaspoon vanilla
  • 1 Tablespoon coconut oil
  • 1/2 cup coconut milk

Instructions

  1. Grind the coffee beans and toasted coconut together in a coffee grinder.
  2. Add the ground beans to the French press and fill with cold water. Add the vanilla extract and coconut oil and cover the French press lid with aluminum foil, keeping the plunger up (do not press the coffee down).
  3. Store in the refrigerator for 24 hours.
  4. Pour the coconut milk into ice cube trays and freeze.
  5. Remove from the fridge and slowly press the coffee grinds down in the French press.
  6. Pour the cold brewed coffee over the coconut milk ice cubes and enjoy!
